Carrot Payasam

Ingredients:
Milk - 1 liter
Carrot - 1 cup (grated)
Cashew nuts - 1/2 cup
Sugar - 1/2 cup
Ghee - 1 tbsp
Cardamom - 4 (powdered)


Method:

  • Soak cashew nuts in 1/2 cup of warm milk.
  • Boil milk in thick bottomed vessel. Keep stirring till milk reduces to half of its quantity.
  • Fry grated carrot in ghee for 5 minutes.
  • Grind soaked cashew nuts and fried carrot to a coarse paste.
  • Add this to the milk. cook for 2-3 minutes.
  • Add sugar, cardamom powder, cook in low flame till sugar dissolves and blends well.
  • Serve chilled.
