Ingredients:
Green Papaya - 1 kg
Mustard Oil - 150 gms
Aniseeds - 1 tsp
Salt - 2 tbsp
Red chilli powder - 1 tbsp
Ginger - 50 gms (paste0
Cardamom - 5
Turmeric - 1 tsp
Asafoetida - a pinch
Method:
Green Papaya - 1 kg

Method:
- Peel and cut papaya into small pieces. Remove seeds.
- Boil the pieces in sufficient water for 5 minutes.
- Drain the water completely and transfer the pieces to a large plate and dry them directly to the sunlight.
- Heat mustard oil till smoke comes then low the flame, add asafoetida, turmeric, ginger paste, aniseed, fry them for one minute. Cool
- In a mixing bowl, put pappaya pieces, salt and chilli powder and oil.
- Mix well.
- Transfer to dry jar and store.
