Ingredients:
Cooked rice- 3 cups
Fried potato cubes - 1 cup
Fried brinjal cubes - 1 cup
Carrot - 1/2 cup (fried)
Onions - 1/2 cup (fried)
Salt and pepper to taste
Oil - 2 tbsp
Method:
Cooked rice- 3 cups

Method:
- Mix all the vegetables with salt and pepper.
- In a baking dish, put half of the rice at the bottom. pour half of oil.
- Then put a layer of vegetables and top up with the rice again.
- Pour the remaining oil over it.
- Bake in preheated oven for 5-7 minutes
- Serve hot.
