Ingredients:
Small clams - 16
Boiling water - 4 cups
Salt - 1/2 tsp
Rice wine or sherry - 3/4 tsp
Soya sauce - 1 tbsp
Lemon slices for garnish
Method:
Small clams - 16
Boiling water - 4 cups
Salt - 1/2 tsp
Rice wine or sherry - 3/4 tsp

Method:
- Thoroughly wash clams. Put into boiling water; boil until shells crack.
- Add salt, wine and soya sauce.
- Garnish with lemon slices.
