BASIC CHANTILLY CREAM

Ingredients:
Whipping cream - 1 cup
Confectioner's sugar - 2 tbsp
Apricot or peach brandy - 1 tsp
Egg white - 1 (stiffly beaten)

Method:

  • Whip cream with electric mixer until stiff peaks form.
  • Add confectioner's sugar, 1 tablespoon at a time, beating in gently.
  • Add brandy, small amount at a time.
  • Fold in egg white gently but thoroughly.
