Ingredients:
Potatoes - 250 gms
Carrots - 250 gms
Onions - 150 gms
Turmeric - 1/2 tsp
Salt to taste
Cashew nuts - 10
Chilli powder - 1 tsp
Mustard seeds - 1/4 tsp
Urad dal - 1 tsp
Curry leaves- few
Dry red chillies - 2
Oil - 2 tbsp
Method:
Potatoes - 250 gms
Carrots - 250 gms

Oil - 2 tbsp
Method:
- Boil potatoes and carrots. Peel and cut into small pieces.
- Finely chop onions, break red chillies and cashew nuts into small pieces.
- Heat oil in a frying pan, add mustard, urad dal, red chillies, cashew nuts and curry leaves.Fry them.
- Add onions; saute till they turn soft.
- Add potatoes, carrots, salt, turmeric ad chilli powder; stir fry for 5 minutes.
- Serve hot with rice or roti.
