Ingredients:
Tart apples - 2
Lemon juice - 1 tbsp
Nutmeg powder -1/8 tsp
Cinnamon powder - 1/8 tsp
Butter - 4 tbsp
Onion - 1 (chopped)
Eggs -6
Water - 2 tbsp
Cheddar cheese - 1 cup (shredded)
Apple slices and parsley sprigs
Method:
Tart apples - 2
Lemon juice - 1 tbsp

Method:
- Peel, core and slice apples into a bowl. Add lemon juice, nutmeg, and cinnamon; mix lightly.
- In a 10" frying pan, melt 2 tbsp of the butterr over medium high heat. Stir in apple mixture and onion.
- Cook, stirring often, just until apples begin to brown. Remove from heat and keep warm.
- In a bowl, beat eggs with water until well blended.
- In a wide nonstick omelet pan, melt remaining 2 tbsp of butter over medium heat.
- Pour ine ggs, cook, gently lifting cooked portion to let uncooked egg flow underneath, until softly set. Remove ffrom heat.
- Spoon half each of the apple mixture and cheese down center of omelet.
- Fold a third of the omelet over filling. Slice unfolded edge onto a warm serving plate, flip folded portion over top.
- Spoon remaining apple mixture over omelet and sprinkle with remaining cheese.
- Garnish with apple slices and parsley.
