Cold precooked rice - 500 gms
Nuts - 3/4 cup
Oil - 1/2 cup
Eggs - 4 (lightly beaten)
Salt - 1 tsp
Ham - 3 slices (finely shredded)
Shallots - 4-6
Soy sauce - 1 tbsp


  • Lightly fry nuts in oil. Drain and sprinkle with salt.
  • Heat wok, add 2 tbsp of oil. Add eggs, when half set add rice, reduce heat, and stir fry well.
  • Add ham, soy, shallots and half the nuts, toss well.
  • Serve garnished with remaining nuts, and shallot flowers.
