Ingredients:
Pork loin - 600 g
Shallots - 6 tbsp (chopped)
Spring onions - 2 tbsp
Coriander - 2 tbsp (chopped)
Roasted rice grains - 2 tbsp
For the sauce:
Dried chillies - 3 (fried)
Ground roasted chilli - 1 tsp
Sugar - 2 tsp
Lemon juice - 2 tsp
Fish sauce - 3 tsp
Method:
Pork loin - 600 g

Method:
- To make the sauce, simply mix all the ingredients together in a bowl: the fried chillies, roasted chilli powder, sugar, citric juice, and fish sauce.
- Stir well and set aside. Next, roast the pork loin whole over a grill, until just cooked.
- While cooking the pork, mix the shallots, spring onion, coriander and roasted grains of rice.
- Once pork is cooked, cut into slices.
- Garnish each slice with a layer of this mixture and serve with the sauce.
