SPINACH IN CHEESE SAUCE

Ingredients:
Fresh spinach - 3 pounds
Milk - 1 cup
Flour - 2 tbsp
Butter - 2 tbsp (melted)
Salt
Pepper
Cheese - 1 cup (grated)

Method:



  • Preheat the oven to 350. 
  • Soak the spinach in salted water for a few minutes to freshen it. Cut off the roots and wilted leaves. Wash thoroughly until no sand can be found in the bottom of the pan. 
  • Cook the spinach in a covered pan with only the water that drips from the leaves. When its crispness is gone, drain the spinach and place it in a baking dish.
  • Meanwhile, heat the milk in the top of a double boiler.
  • Blend together the flour and melted butter, then stir the mixture into the hot milk. Season to taste with salt and pepper.
  • When the mixture begins to thicken, add the grated cheese. Stir until the cheese has melted and the sauce is smooth.
  • Pour the sauce over the spinach and bake until it is browned.
