BRAISED LEMON CHICKEN

Ingredients:
Large chicken - 1
Sugar - 2 tsp
Oil- 3 tbsp
Ginger slice - 1
Garlic clove - 1
Lemons - 2
Salt
Sherry - 1 tbsp
Stock or water - 1/2 cup
Soy sauce - 2 tbsp
Corn flour
Coriander and lemon curls

Method:

  • Rub chicken lightly with salt.
  • Mix soy, sugar, sherry and lemon juice together, brush over chicken, allow to stand one hour.
  • Heat wok, add oi, ginger, garlic, chicken, and brown all over, add stock and marinade and simmer with lid on 20-30 minutes.
  • Remove chicken, chop chinese style.
  • Thicken sauce with blended corn flour, spoon over chicken.
  • Serve garnished with coriander and lemon curls or wedges.
